It’s not enough to just say ‘mozzarella’.

According to international food legislation, ‘mozzarella’ is a generic and neutral term (like pizza, pasta, etc.) used throughout the world and without any link to historic traditions, cultures or artisanal practices.

Saying ‘Mozzarella di Bufala campana DOP’ means a whole lot more.

The DOP trademark has permitted:

  • The valorisation of a centuries’ old history
  • The identification of an area of origin
  • The linking of the product to compliance with a series of strict regulations
  • Making known the original product
  • The sanctioning of fake mozzarellas
  • A widespread knowledge of its unmistakeable flavour
  • The consumer to identify a genuine buffalo mozzarella from amongst all the others.

Areas of origin

Mozzarella di Bufala was originally created in Campania many centuries ago but, today, the DOP is produced in a vast area of Central and Southern Italy.

The entire provinces of Caserta and Salerno, parts of the provinces of Naples and Benevento.

Parts of the provinces of Latina, Frosinone and Rome.

Part of the province of Foggia and the Municipality of Venafro.

The DOP areas

The production area of Mozzarella di Bufala Campana DOP includes wonderful places with a wealth of history, traditions and biodiversity. The DOP areas include 3 National Parks and up to 10 Regional Parks.

Mozzarella di Bufala Campana is the most important DOP trademark in Central-Southern Italy

“I bufali incedono nuotando dove l’acqua è alta e camminando dove è bassa di guisa che le erbe fluviali e le alghe vengono completamente estirpate con l’avvilupparsi strettamente ai loro arti.
